potato chip cookies

and half with chocolate chips


Ingredients
4 sticks butter, softened

3/4 c evaporated cane juice
3  3/4 c all-purpose flour

1 teaspoon vanilla

1  1/2 c coarsely crushed potato chips

1/4 c confectioner’s sugar

Directions
Preheat oven to 300*.

In a large mixing bowl cream butter and sugar.  Slowly blend in flour and vanilla.  Add crushed potato chips and mix well. Using a teaspoon, drop cookie dough 2” apart onto a ungreased cookie sheet or line cookie sheet with parchment paper.  Using a fork, slightly flatten each cookie.  Bake 18-20 minutes, or until light brown around the edges.  Remove to wire rack to cool.  Sprinkle with confectioner’s sugar.

Optional: divide cookie dough in half and add chocolate chip pieces!
