Buddha jumps over the wall

One of the most popular dishes of Fujian cuisine is "Buddha jumps over the wall" (佛跳墙, Fotiaoqiang), a complexsoup making use of many ingredients, including shark fin, sea cucumber, abalone, and Shaoxing wine and requiringone to two full days to create. The name of the dish reflects the appeal of the soup. It is said to be so enticing that even a vegetarian monk (Buddha) himself could not restrain himself and would sneak out of the monastery (literally "jump over the wall") to steal a taste.
